After a glass of Campolargo Brut accompanied by prawns in tempura in the cosy bar of the hotel, dinner was served in the main restaurant, overlooking the ocean.

Chef Christoph Voigt, and old friend of the Chaîne, proposed a special menu for that festive evening: an amuse-bouche, a tuna tartare on avocado cream served with a glass of white Barranco Longo from the Algarve, followed by a delicious carrot and orange cream soup with ginger perfectly matched by a delicate Rosé from Sangiovese grape made by the Herdade Portocarro, near Setubal. The main course was a pink roasted duck breast on a ragout of apple and mushrooms with corn tart and Madeira Wine foam, again perfectly matched with a red wine from the “Conceito” winery in the Douro region. And we finished on carob tart with raspberry puree and vanilla ice cream served with an LVB Port from Quinta das Carvalhas.

Compliments to Chef Christoph, his sommelier Guilherme Pierce and the Maître d’ Stefano Silvestre for a memorable event, and to the staff of the Boutique Hotel Vivenda Miranda for their great service.
